Epsilon User's Manual and Reference > Variable Reference >

default-read-encoding: preference variable

Default value: ""

When Epsilon reads a file, no particular encoding was selected for it, and auto-detecting (see the detect-encodings variable) doesn't select an encoding, it uses the encoding named by this variable. If the variable doesn't contain the name of a known encoding, Epsilon uses the Raw encoding.
